Leek, pea and ham farfalle
You may or may not have noticed that I’ve been a bit lacking on Slimming World updates of late, in which case I’m sure you won’t be surprised to hear that I have fallen off the diet wagon rather spectacularly! It all started after out short break to Alton Towers back in the beginning of september and has kind of gone a little downhill since then. We have still been eating SW meals mostly in the evenings but breakfast and lunch have not been so SW friendly.

I have put on a couple of pounds which isn’t too bad, but I am determined to get back on it. I just wanted to share with you a pasta dish that is so simple to knock up. We all love it in our household.
Give it a go and let me know what you think!
Serves 4
Ingredients
350g dried farfalle pasta175g frozen peas
low calorie cooking spray
2 leeks, trimmed and thinly sliced
150ml hot chicken stock or vegetable stock
100g fat free natural fromage frais
2 large eggs, lightly beaten
175g lean ham, all visible fat removed, shredded
30g reduced fat cheddar cheese, grated
salt and freshly ground black pepper
Method
Cook the pasta according to the instructions, adding the frozen peas for the last 3 minutes of the cooking time.
Meanwhile, spray a large frying pan with low-calorie cooking spray and fry the leeks for 2-3 minutes. Pour in the stock and simmer for 4-5 minutes. Remove from the heat and stir in the fromage frais.
Drain the pasta and peas and return to the pan. Quickly stir in the eggs, leek mixture, ham and cheddar and cook for 1-2 minutes, stirring well.
Season to taste and serve with a mixed salad.

![[AD] The sun has finally made an appearance and the boys have been making the most of it by spending it
in the garden.
They’re go-to is always football and they’ve been trying to improve their aim and accuracy with the new Messi Foldable Footlball goal from the #MessiTrainingSystem range.
I love the fact the goal is foldable, making it easy to store away when not in use. It is also lightweight so you can effortlessly pack it up  and take it to the park or to a friend’s house.
The Messi Foldable Football Goal retails at £36 and can be purchased from @argos

That does look very good! I’m trying to keep the weight off this pregnancy by eating healthily but sometimes it’s very hard! I tend to avoid carbs in the evening but I will definitely try this out for lunch! X
It’s delicious and rather tasty. I was surprised to find that the boys enjoyed it too as they are not a lover of leeks or peas but combined with the “butterfly” pasta and they love it.
Congrats on the pregnancy – do you blog would love to check it out if so? x

We all love pasta in our household too. It’s one of our weekly staples! 😉
Sounds really nice although I would leave the eggs out! #KCACOLS
Debbie
The egg thing I thought was a bit odd but does make it a bit more “saucy” the only thing its not something you can cook and have later as otherwise you end up with scrambled egg like bits in your pasta! lol
Ooòh this is really making me hungry xx
i made this last night! was delicious! Eager to know how many calories are in the dish!
It is delicious isn’t it? We haven’t had this in a while actually but I think it’ll be in he meal plan for next week! x
Yummy this looks amazing!
I am going to add it to my meal plan next week and give it a go!
