Guest Post: White Pizza Pitta

I thought that I would share one of my favourite recipes with you. I am all about quick and simple dinner ideas and when they involve two types of cheese and bacon then that makes me even happier! We use a lot of simple flavour combinations in our cooking and garlic and spinach have to be our most popular combination. It’s a flavour you just can’t go wrong with. I always have spinach in the freezer as it’s so easy to add a dose of greens and you don’t have to worry about it going off.
This recipe is one of those meals that leave you feeling all warm inside and with winter on its way it’s a great recipe to have in your collection. What’s also handy is the fact you don’t have to make up a pizza dough. Dig out some pitta bread (something else I always have in my freezer) and you’ll have a crisp base without even trying.
The main difference with this pizza is that there is no tomato sauce, that’s what makes it “white”. You just spread the cheese over instead. Sounds good right? I guess you want the recipe then?
White Pizza Pitta
– Serves 4 –
Ingredients
- 250g tub of ricotta
- 100g grated mozzarella
- 160g frozen spinach, defrosted
- 3 cloves of garlic, finely sliced
- 4 wholemeal pitta breads
- Salt
- Pepper
Method
Preheat the oven to 200ºC/Gas 6.
In a bowl combine the garlic, spinach, salt, pepper and ricotta. Stir until fully combined.
Spread onto the wholemeal pitta.
Top with grated mozzarella.
Bake for 10 – 15 minutes or until the mozzarella is golden brown.
